(Zucchini) Noodles and Sausage
Growing up Italian, I ate pasta pretty much every day for every dinner for pretty much the first 18 years of my life. Honestly, one of the biggest culture shocks of joining the Army was not having pasta for dinner. I was used to the yelling thing (see Italian part), but not having some form of pasta and tomato sauce was about as foreign to me as eating fish eyes.
Some foods or types of food just have more emotional significance then others. For me, the two foods will always be pasta and pitzels (an Italian cookie).
Finding a Paleo substitute that isn’t some almond flour laden fail is sort of a big deal for me.
I made the sauce first, using Melissa Joulwan’s recipe from WellFed. Buy the book because it’s that good.
Next, I browned the sausages in a cast iron skillet and added that to the simmering sauce.
While the sausage was finishing cooking, I used a potato peeler to make the noodles. I peeled it down to where the seeds were and added the noodles of two zucchinis to the sauce.
I gave it 3 minutes in the pot to cook and then happily consumed it all.
