A Really Offal Salad

I couldn’t resist the terrible, terrible joke for the name of this post. The salad actually came out pretty good. I think chicken hearts are the perfect gateway food to eating offal. I ate half of this for dinner last night and am eating the other half today for lunch.
The dish is simply just grilled chicken hearts in a marinade of lemon juice and apple cider and than finished with mustard and some chili powder. Chicken hearts look and taste kind of like a sausage. So its easy to trick yourself into eating it. Sausage salad seems kind of like an oxymoron and may seem unappetizing, but I tried it and loved it.
Apple Cider Chicken Heart Salad
“Marinate the chicken heart in the lemon juice and apple cider vinegar over night. This will make the meat much juicer and less tough. Add the coconut oil to a ridged pan and cook on a very high heat. Cook for 10-15 minutes, draining the excess liquid as needed. The hearts are done when they are brown all the way through and should have a charred outside. In doneness and consistency, they should be like sausage.
Remove from heat, mix with the mustard and chili powder. Let sit a 2 minutes before eating. Once eating all of the meat, add some lettuce to the bowl and use the left over cider and mustard mixture as a warm salad dressing. It tastes like a sweet vinaigrette. ”
